RECIPE: CHOCOLATE RIPPLE CAKE!

Recipe: Chocolate Ripple Cake! -------- Start to finish: Preparation: 15 minutes Fridge: 2-4 hours (depending on biscuits) Ingredients (serves 10-12): 1 large thickened cream suitable for whipping (600ml) 1 packet Arnotts Chocolate Ripple biscuits (250g)** 1/4 cup icing sugar 1 tsp vanilla essence 1 tsp rum essence 3 tbsp water Chocolate shavings or nuts to garnish **Alternate biscuits you can use: USA: Nabiscos Famous Chocolate Wafers Canada: Mr. Christie's Chocolate Wafers UK: Apparently Arnotts biscuits are available to you (or so I've been told) Method: Place a large bowl in the freezer for a few minutes to get it super cold (helps to beat the cream faster). Mix rum essence and water while you wait. We are diluting the essence so that it isn't too strong as the flavour will develop over time the longer the cake stays in the fridge when done. Remove bowl form freezer and pour cream into it. Add icing sugar and vanilla essence to cream and beat until stiff peaks form. With a spatula, swipe a layer of cream onto your serving dish. This will serve as your foundation for placing your biscuits on. Place your first biscuit into the rum mixture and coat one side only, place this onto the cream. Spoon some cream onto the next biscuit and sandwich it together with the first one. Continue doing this until all biscuits are used. Continue using the rum mixture on about every third biscuit. you can use it more often or less depending on how strong you want it. Once the cake is assembled, use the remaining cream to cover the top and sides, using a spatula to smooth it out. Place in fridge for 2-4 hours. Time will vary depending on biscuits you use, so to check to see if it is done, use a cake skewer. It is goes in and out with little resistance then it is ready. Garnish the cake with your favourite chocolate or nuts. When serving, cut the cake at an angle so you get the biscuit/cream pattern. Enjoy! -------- Thank you for watching my cooking video. SUBSCRIBE Get 2-3 brand new videos every week (TUE, THU, FRI), including recipes, kitchen hacks and handy cooking tips to help you feed your family and friends: https://goo.gl/Jj6YCG CHOCOLATE RUM BALL TRUFFLES Makes about 40 Prep 30 mins (+ 1½ hours setting time) Cooking 5 mins 250g pkt Arnott’s Choc Ripple biscuits 1 cup (80g) desiccated coconut ¼ cup (60ml) dark rum or Malibu coconut rum ¼ cup (60ml) condensed milk 2 tbs cocoa powder 150g dark chocolate melts 150g white chocolate melts 150g milk chocolate melts Cocoa powder, to decorate 1. Line a baking tray with baking paper. To make the truffle mixture, place the biscuits in a food processor and process until finely crushed. Transfer the biscuit crumbs to a large bowl. Add the coconut, rum, condensed milk and cocoa powder to the biscuit crumbs and stir until well combined to get a fudge-like texture. Alternatively, to make truffles without adding alcohol, replace the dark rum or Malibu coconut rum with ¼ cup (60ml) thickened cream. 2. For even-sized truffles, roll heaped teaspoonfuls of biscuit mixture into balls and place on the lined tray. For a chewy texture, place in the fridge for 1 hour or until truffles are firm. Place the dark chocolate melts in a medium heatproof bowl over a saucepan of simmering water, making sure the bottom of the bowl doesn’t touch the water. Stir with a metal spoon until chocolate melts evenly and is smooth. Repeat with white and milk chocolate melts in separate heatproof bowls. 3. To evenly coat the truffles, use a fork to dip 1 truffle in melted dark chocolate. Tap on the edge of the bowl to remove excess. Place on the prepared tray. Repeat with remaining truffles, alternating between dark, white and milk chocolate. Allow to set for 30 mins. Place remaining chocolate in separate sealable plastic bags. Cut off 1 corner. Drizzle the dark truffles with white chocolate and the white truffles with dark chocolate. Dust milk chocolate truffles with cocoa powder. Maple Custard Pie With Meringue (1960)

When making the meringue I misspoke, I actually added 6 tablespoons of sugar not butter. You will need one baked pie crust. Here are the ingredients for the custard: 1/2 cup sugar 1/4 cup cornstarch 1/2 teaspoon salt 1 cup maple syrup 2 cups Half'n'Half (1 cup whipping cream and 1 cup milk) 3 egg yolks, tempered 1/2 teaspoon maple extract (I added a little less) 1 tablespoon butter Meringue: 1 tablespoon cornstarch 2 tablespoons cold water 1/2 cup boiling water 3 egg whites, beaten 6 tablespoons sugar 1 teaspoon vanilla Bake meringue at 350 degrees for 12-15 minutes or until browned lightly. Ingredients; 150 gr. Caster Sugar 150 gr. Wall Nuts (crushed) 180 gr. Grated Milk Chocolate 50 gr. Butter ½ Tbs. Vanilla Essence 30 ml. Baccardi Rum 80 gr. Desiccated Coco Nuts Method; Whisk the Butter and Caster Sugar till creamy. Add the grated Milk Chocolate, crushed Wall Nuts, Vanilla Essence, Rum and 30 gr. of the Coco Nuts. Form the dough into 1cm. balls. Roll the balls in the remaining Coco Nuts. Rest the Rum Balls in Fridge for a couple of hours. These traditional European Rum Balls are very easy and quick to make and perfect for when friends drop around in the silly season

No Bake Cookie Cake 1 lb box of Butter Biscuits 2 sticks of butter (230 g) 3/4 cup of sugar 5 eggs 1 tea spoon of vanilla extract 1 table spoon of Rum or Cognac 1/2 cup of dark chocolate chips For Chocolate Ganache: 2 bars of Dark Chocolate (about 200 g) 1 cup of Heavy Cream 1/3 cup of white chocolate for decoration Method: In a large glass bowl separate 5 eggs. Set egg yolks aside. Using hand mixer bit egg whites to foam, add your sugar gradually. Continue mixing until mixture becomes white and fluffy (soft peaks). Add egg yolks. Mix on high speed until egg custard lightens up in color. Put your egg custard bowl on a double boiler. Make sure bowl fits perfectly on top of the pot. Start whisking egg custard until doubles in size, thickens and warm to touch. Do not boil!!! Mix in 1/3 cup of chocolate chips and Rum or Cognac, when all mixed in remove from double boiler and set on top of the ice bath to cool. Keep mixing until your chocolate egg custard cools down and no longer warm to touch. In a separate bowl, add 2 sticks of butter room temperature, start whipping on medium speed. Add your chocolate egg custard spoon by spoon to whipped butter. Mix to combine. Do not over mix, or the butter will start separating. In a glass backing dish arrange cookies in rows. Make sure to cover entire bottom of the dish. Spread your chocolate egg custard on top of the cookies about 1/2 of an inch thick. Continue with row of cookies and chocolate custard until only one layer of cookies left. Keep top layer uncovered. How to make chocolate Ganache: Cut your chocolate in a cubes. In a small sauce pan heat up heavy cream. Pour over chocolate, mix to combine. Melt a little bit of white chocolate for decoration. Pour your chocolate Ganache Over top layer of Cookie Cake, spread evenly. Decorate with white chocolate! Put Cake in a Fridge and leave it there for at least 12 hours. Serve and enjoy! Prepare the crust. Place the oreo cookies into the bowl of a food processor and crush until crumbs form. Add melted butter and process until evenly moistened. 2. Press the mixture into the bottom of a greased 8 inch (20 cm) springform pan using the back of a spoon. Refrigerate until the first layer of mousse is prepared. 3. Prepare dark chocolate mousse. In a heat proof bowl add the semi-sweet chocolate and 1/2 cup (120g) whipping cream. Place the bowl over a saucepan with simmering water, over low heat until all the chocolate is melted. Meanwhile dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. Place the gelatin over low heat just until the gelatin dissolves and pour it over the melted chocolate mixture. Let the chocolate mixture cool completely at room temperature. 4. Whip the remaining 2/3 cup (160g) cold whipping cream until stiff peaks form. Add melted chocolate mixture and mix until well combined. 5. Pour the chocolate mousse over the crust and refrigerate for about 15-20 minutes to set slightly, until you prepare the next layer of chocolate mousse. 6. Repeat the same steps for preparing the milk and white chocolate mousse layers. 7. Refrigerate the cake for 4 hours or overnight to set. 8. Run a knife around the edges of the cake to remove the sides of the pan. 9. Before serving dust the top of the cake with cocoa powder and decorate with fresh berries if desired. Enjoy! We've got a beautiful, chilled cake that's been perfectly crumb coated. It's ready to go. I have some fondant paste here. And what fondant paste basically is is a gelatin and powdered sugar mixture, and it should feel like Play-Doh. So, once you get it out of your bucket, you want to knead it. Press down with the heel of your hand forward, then take your fingers and fold it back over. If you feel any crumbly bits, you want to cut them out right away. You don't want to incorporate them into your fondant, or you're going to have some little pebbles in there. They don't get softer. So it should get to the consistency where, when you rub it like this, you get a beautiful, smooth finish. You shouldn't see any little folds in there. Now, how much fondant do you need for a cake? That's a great question. What I have here is one of my many tape measures. And what I'm going to do is lightly drape it over the cake. Alright. So, this goes to the three-seventh mark. The way to measure your fondant is you want to have a disc that's about an inch tall that will flip over three times within that amount of area. So I've got my measure down here to three-seven. I'm going to mark it with my fondant paddle, you guys can see it there. And I don't know if I have one, two, three, it's pretty much perfect. It's a little bit thick, so I'm going to cut a little off. I don't want to have so much that I've got a giant overhang over my cake. If I do that, it's going to really tug down. This is not light stuff, and my corners are fairly sharp. So if I have too much fondant and too much overhang, it's going to really want to rip around the top, which can be very frustrating. You'll notice, too, that my cake is on top of a little riser here. And that's so that, after it's fondanted, I can go in and cut straight around. I don't have to go in and cut around the edge there, so I'm going to get a nice, sharp edge to my bottom. Move that off to the side. I have some powdered sugar here and a fine-mesh strainer. I have two fondant paddles. I like to have two so I can have one hand on top while the other one smooths the side. And I'm going to put a thin, light layer of powdered sugar over the entire area which I'm going to roll it out onto. So I'm not just doing a pile in the center and pushing it out. I'm doing the giant, giant circles. So that's about how big it's going to be. Less is more with the powdered sugar. You don't want to overdo it because the corn starch that is in powdered sugar will dry it out really quickly. The pin that I'm using is a French rolling pin. What I really love about this is that it's beveled on the side so that I can give more pressure on the left side or the right side so that I get a really perfect circle. Also, my right arm is much stronger than my left, so this helps me to even that out. So I'm going to start by just rolling between here and here. You'll notice I'm not going over the edge. I pick up a little more of the powdered sugar. If you're doing a lot of these, it's a good idea not to wear blue jeans. This will pick up any kind of lint. The powdered sugar helps to create a static electricity, so any little fuzzies will attach to this. Okay, here we go. Now is not the time to answer the phone. If you walk away from this, it's going to be so dry that when you try to put it on your cake, it's going to crack around the edges, and you're going to get what looks like elephant skin. I'm taking this down to about an eighth of an inch. If you can see the pattern of the table beneath it, it's too thin. Alright. So, I will bring over my cake which has just come out of the refrigerator. I will put the bore, the rolling pin straight over the top and roll this back up. And as I roll it onto itself, I'm dusting off any excess powdered sugar. That will keep it from sticking to the butter cream. There we go. This is the easiest way to pick it up. Move this directly in front of you. And I'm going to line up the bottom lip with the bottom of the cake and then slowly unroll it over the top. And if it's a little bit sh

French Silk Pie is actually super easy to make, the hardest part is waiting for the chocolate filling to solidify. Yes, it’s hard and it totally stinks waiting! Hopefully though I’ll at least make this recipe fool proof for you so that you can whip it up and serve it to your friends. PRINT THIS RECIPE: https://www.billyparisi.com/french-silk-pie-recipe/ SUBSCRIBE: http://bit.ly/2zql9ha WEBSITE: https://billyparisi.com INSTAGRAM: https://www.instagram.com/ChefBillyParisi FACEBOOK: https://www.facebook.com/ChefBillyParisi PINTEREST: https://www.pinterest.com/ChefBillyParisi Ingredients for this French Silk Pie Recipe: For the crust: 1 ½ cups of Bob’s Red Mill All-Purpose Flour 1 stick of unsalted butter pinch of sea salt 2 teaspoons of sugar ¼ cup of ice cold water For the Filling: 3 cups of heavy whipping cream 1 cup of unsalted butter 4 ounces of semi-sweet chocolate ½ cup of sugar + 2/3 more 4 eggs Procedures: 1. For the Crust: Preheat the oven to 450°. 2. add the flour, butter, salt and sugar to a food processor and pulse on high speed while drizzling in the water until it becomes like a meal. Note: you may need a bit more water. 3. Transfer the dough to a clean surface dusted with flour and roll the dough out with a pin until it is 1/8 thick. 4. Form the dough to a 9” pie pan cutting off any excess and crimping the edges to make a ripple around the outside. 5. Add a piece of parchment paper over top of the pie crust followed up with some dried beans and park bake for 6 minutes. 6. Remove from the oven and cool completely. 7. Filling: Add the heavy cream and ½ cup of sugar to a standing mixer with the whisk attachment and whisk on high speed until stiff peaks have formed, about 3 to 5 minutes. 8. Set 1/3 of the whipped cream into a separate container but chill both the 1/3 and 2/3 in the refrigerator until it’s time to use it. 9. Add the chocolate to a microwave safe bowl and heat for 1 minute. Stir and return to the microwave for :30 seconds. Stir and return to the microwave for :30 more seconds. At this point it should be melted. Cool to room temperature 10. Add the butter and sugar to a standing mixer with the paddle attachment and mix on high speed until the butter becomes light and fluffy, about 5 minutes. 11. Next add in 2 of the eggs and beat for 2 minutes before adding in the other 2 eggs. Beat for a further 3-4 minutes or until smooth and fluffy. 12. Fold in the chilled 1/3 cup of heavy cream using a rubber spatula until all of the white cream has been mixed in. 13. Transfer the filling to the par baked pie crust and smooth out using a spoon or spatula. 14. Chill in the refrigerator for at least 2 hours. 15. Top off with remaining chilled whipped cream and add optional garnish of shaved chocolate.

These are actually fruitcake cookies from somewhere in the 1970's. Fruitcake Cookies The batter: 1 cup butter (2 sticks) softened 1/2 cup sugar 1/2 cup light brown sugar 1 large egg 1/2 teaspoon ground nutmeg 1/2 teaspoon cinnamon 1/2 teaspoon ground ginger 1/2 teaspoon cardamom 1/2 teaspoon salt 2 tablespoons rum 1 teaspoon vanilla extract Mix all together until smooth and thoroughly combined. 2 2/3 cups all-purpose flour or cake flour (sift before measuring) 1/2 teaspoon baking powder 1/2 teaspoon baking soda Combine flower mixture with butter mixture Fruits and nuts 8 ounces candied cherries, snipped in half 8 ounces candied pineapple, snipped into small pieces 1 cup golden raisins, soaked in hot water for about 30 minutes then drained. 8 ounces chopped walnuts 8 ounces chopped pecans Thoroughly mix fruits and nuts with 2 tablespoons all-purpose flour Combine fruit and nut mixture with batter making sure all are coated with the batter. Drop by tablespoon onto parchment lined baking sheets spaced about 2" apart. Bake at 350 degrees 25 minutes if using stainless steel thick bottom baking pans on bottom rack of the oven If using dark or thin baking sheets bake for 15-20 minutes. Cool in pans about five minutes then transfer to cooling racks These cookies will keep for several weeks in a cookie jar. Here is what you'll need! No-Bake Cookies And Cream Cheesecake Serves 6-8 INGREDIENTS 36 chocolate sandwich cookies 5 tablespoons melted butter 800 grams cream cheese ⅓ cup sugar 1 tablespoon vanilla extract 1 cup milk, warm 8 grams gelatin PREPARATION 1. Separate the cream from the cookies into 2 different bowls. 2. Place the cookies into a plastic bag and crush them into fine crumbs with a rolling pin. Set aside 1/2 cup of the crumbs for later. 3. Pour the cookie crumbs into a bowl and combine with the melted butter, mixing until the texture is like slightly wet sand. 4. Press the cookie crumbs in an even layer into the bottom of a 9-inch springform pan. Set aside. 5. In a medium pot over low heat, mix together the cream cheese, sugar, the cream from the cookies, and vanilla extract, stirring until there are no lumps. 6. In a measuring cup, mix the milk with the gelatin until dissolved. Pour the milk into the cream cheese mixture, stirring constantly until the mixture starts to bubble slightly. Remove from heat. 7. Pour the mixture over the cookie crust in the springform pan. Using a spatula or a spoon, smooth the top. 8. Sift the saved cookie crumbs on top of the cheesecake in an even layer, then refrigerate for at least 4 hours. Unclasp the ring of the springform pan, slice, then serve! Using a 900 gram traditional Panettone we will be making three recipes using the entire Panettone: This is recipe two: (Using up our left over Panettone we cut three slices) These are so delicious and fun to make too. Use up Panettone or just create some amazing recipes with a twist. Panettone Ricotta Filled Chocolate Log from the simpleycooking channel. (PREP TIME: 15 MIN, COOKING TIME NONE) INGREDIENTS: (this will make 2 small logs) 3/4 - 1 x cup fresh ricotta cheese 1/4 x cup fresh cream 1/4 x cup of sugar (you can use less if you wish) zest of one medium orange 1 x tablespoons orange juice semi sweet chocolate for melting METHOD: -cut three slices of the panettone you have left over -using a rolling pin, roll each one out and flatten -place the rolled slices on a tray lined with baking paper -lay the slices in one line, but over lap each piece so they sit on the edge of the other by about 1cm -gently roll on the joins to press the slices together -set aside -in a large bowl mix the ricotta, cream, sugar, zest and juice till a smooth cream forms -layer the cream mixture over the panettone slices, leaving 1/2 cm gap all the way around -using the paper roll up the cake length ways, gently but firmly and stop when the seam is face down -place in fridge while you melt the chocolate -place some melted chocolate in a small rectangular dish and sit the roll in so that the bottom gets coated with chocolate —using a spatula, coat the rest of the cake, the sides and over the top -allow to sit and set at room temperature for approx 15 minutes then place in the fridge to finish setting -when ready to serve, allow to sit on bench for 5 minutes before cutting in slices on a diagonal NB: THIS CREAM MIXTURE WILL GIVE YOU MORE CREAM THAN IS NEED FOR THE THREE SLICES. YOU COULD MAKE A LARGER CAKE BY CUTTING ANOTHER PANETTONE.
